Our Story

Built around better coffee and better service.

Conservative Coffee started from a simple idea: nobody should have to choose between a good cup, a fast line, and a place that actually feels like home. So we built the shop we wanted to drink at — the roast done right, the order taken by a person, and a front porch where the trucks, the bikes, and the strollers all end up parked next to each other.

Coffee

Roasted for flavor, not for shelf life. The board is short on purpose so everything on it is worth ordering.

Our Coffee

Quality you can taste.

Great coffee starts a long way before the cup. Here is the whole of it, in four steps, with nothing hidden behind a word like “artisan.”

    Sourced on purpose

    We buy from growers we can name and importers who will answer the phone. Nothing on our shelf is a mystery lot bought on price alone.

  2. 02

    Roasted in small batches

    Medium is our house standard — the roast that stays honest black, holds up to cream, and does not fall apart over ice. Conservative Brew is that cup.

  3. 03

    Dated, never dusty

    Every bag carries a roast date, not a best-by guess. If it has sat too long it comes off the shelf, because stale coffee is not a bargain.

  4. 04

    Pulled the same way, every time

    Same dose, same grind, same timing, whoever is on bar. Consistency is the least glamorous part of good coffee and the part customers actually feel.

House brew ratio

1:16 — about 60g of coffee to a liter of water, ground medium, brewed at 200°F. That is what we pour at the shop, and it is what we tell people to do at home with a bag of Conservative Brew.

The Shop

Somewhere to actually sit down.

Brick, timber, a fireplace going in the winter, and a hand-built flag on the back wall. We put real chairs at real tables because the point of a coffee shop is not the coffee — it is the hour you spend with it, and whoever is sitting across from you.

The Merch Counter

Wear it. Carry it. Brew it at home.

The shelf by the register is not an afterthought. Heavyweight navy tees printed front and back, embroidered caps with the flag on the side panel, and the mug the whole logo was built around. If somebody asks where you got the shirt, that is the point.

And the coffee goes home with you. Whole bean or ground, sealed in a navy bag with the roast date stamped on it — same beans we are pulling shots with out front.
